Day 2: Bogota
Bogota Foodie Experience
This morning, join your guide for a visit to the La Concordia market, this plaza is almost 80 years old, a plaza much loved by the community. It was a space that was outdated and had no projection for the present and future, so they undertook complete restoration and now it is one of the most anticipated places. This is a project that combines art and gastronomy, unique in Colombia. La Concordia Market was initially built as a place for farmers to sell their products. Over time, it evolved into the bustling market it is today – offering a wide array of goods ranging from fresh fruits and vegetables to handmade crafts and artwork. As you walk through the market, stop to engage with the farmers and merchants. You will visit the vegetable and fruit corners to sample up to 20 different fruits from all regions of the country. You will learn how to select, open, and cut the fruit while your guide will share relevant information about the history of Colombia through fruits. Toast Colombia, the world’s fruit reserve, in an exclusive and refreshing tasting of exotic fruit juices and extracts.
Taste Atlas, a renowned experiential food guide, recently presented its ranking of the 50 best breads in the world, and Colombia had four on the list with some traditional doughs from the country, including pandebono, cassava bread, cheese, and almojábana. You will visit Pandebono y Café, El Dorado, where you will not only sample this delicious mixture, but can pair it with delicious chocolate. For many customers there is no comparison with other stores and bakeries that sell this product. El Dorado is a tradition in the center of Bogotá.
It’s then on to the Callejón del Embudo, a square in La Candelaria, for a stop at the emblematic Chorro de Quevedo. Here, you will taste chicha, whose main ingredient is one of the oldest food products of humanity: corn, of Muisca origin. According to the Indian chronicles written by the settlers, the Muiscas held rituals and tributes around the chicha. Chicha is the preparation that has had the most opponents: conquerors, politicians, businessmen, and even the Church, who censored its consumption and threatened the faithful with excommunication. This indigenous ferment, causing a stir on the national agenda, has also been the inspiration for poems, songs, and couplets. In a chicha totuma, the history, culture and heritage of an entire country is mixed, a product that has survived for centuries and that today has become a trend, especially among new generations.
Your next stop La Perseverancia market, that brings together flavors of Colombian cuisine. The gastronomic appeal of the market is due to the diversity of typical Colombian food offered by 14 kitchens. Here, you will have lunch at Cositas Ricas de Doña María, notable for its Cundiboyacense food dishes. This kitchen has been in La Perseverancia Plaza since 1949. Taste the ajiaco and learn the tricks of its preparation.
You will be back at the hotel to rest.
This evening your culinary adventure will end with dinner at LEO Restaurant, a gastronomic concept offering immersive experiences in two unique settings: Leo and La Sala de Laura. Under the vision of chef Leonor Espinosa and sommelier Laura Hernández, it merges culinary philosophy and liquid offerings to create a sensory journey that redefines the narrative of Colombian gastronomy, celebrating its lush biodiversity.
Its proposal, named CICLOBIOMA, is inspired by the interconnection between humans, cultural heritage, and the natural environment, honoring sustainability and local economies.

Day 4: Villa de Leyva
Walking Tour
This morning, join your guide for a 2-hour walking tour of Villa de Leyva, a colonial gem and a national monument that has exquisitely preserved part of Colombia’s past. Nestled in a mountain valley, the low, white-washed adobe buildings of the town harken back to the time in the 1600s when Colombia was trying to break free from Spain. The focal point of the town is the Plaza Major, a huge open space that claims the title of the world’s largest cobblestoned plaza. Ringed by old mansions from the 17th century, the most prominent building in the plaza is the Iglesia Parroquial (Church of our Lady of the Rosary), a simple white church with a prominent bell tower. The town’s Catholic Church reigned supreme for centuries, so religious buildings abound in and around the town. As you walk along the streets, you notice the spiral forms of ammonites and fossilized shellfish that decorate the town’s buildings. The fossils abound in the surrounding countryside, so masons incorporated the shapes in the rocks into their work, making it common to see fossils embedded in door frames, walls, flagstones, and many other architectural elements.
Iguaque Flora and Fauna Sanctuary Tour 3 Hours each way
In the afternoon, join your guide for the 30-minute drive to the Iguaque Flora and Fauna Sanctuary for a 3-hour one-way hike to Iguaque Lake. This sanctuary is the habitat for a variety of animals that are only present in the Colombian Andes.
